Chopped Salad with Sesame Peanut Dressing

This Chopped Salad with Sesame Peanut Dressing is vibrant, crunchy and bursting with flavour.
There is something so satisfying about a big crisp salad on a warm day, and this Chopped Salad is perfect for just that. Try prepping the salad ahead with the Sesame Peanut Dressing set aside for a simple, healthy, make-ahead meal.
Homemade Peanut Dressing
To be honest, this dressing is exceptional. We actually perfected this a long time ago and added it to the Fraîche Table meal plan, but it felt like the perfect opportunity to use it here. If it ain’t broke, don’t fix it!
This is one of my all-time favourite dressings, and you’ll see why once you take your first bite. Substitute a seed butter for the peanut butter to make this nut free should you wish.
Healthy Salad Ideas
I love salads, but as someone who grew up in a “meat and potatoes” family, I am aware not everyone feels the same. I think a lot of the misconceptions about salads come from the idea that they are ‘boring.’ I like to make it my personal mission to make exciting, healthy, fresh salads! I have a pretty decent repertoire at this point between the blog and Fraîche Table, and our list is always growing. We decided to do a Salad Series this month so stay tuned for more recipes. In the meantime, here’s a list to get you started:
